This dinner bowl is not only hearty and filling, but also full of nutrients. It is very dense in nutrients and will provide your whole necessary daily intake of vitamin K, C and A. This bowl is easy and quick to make for a weeknight, and to pack as a meal for work in the next day.
Ingredients for two servings:
2x150g Salmon filets
Fresh kale
4-5 medium sized ancient carrots
1/2 celery root
1 medium zucchini
olive oil, lemon juice, black pepper and salt
Preheat oven to 180 degrees Celcius. While waiting for it to heat, cook the carrots, celery root and zucchini on a pan, one after another, just until they are softened.
Sizzle the salmon filets with lemon juice and salt and bake in the oven for 15 minutes.
In the meantime, marinate the kale with salt, lemon juice and olive oil and massage until it is softened.
Combine everything together in a bowl, add more lemon juice over the veggies and sprinkle with black pepper.
